Hey girlfranns! I wanted to put together a post on everything I made for Postpartum Meals!
There are so many ideas on pinterest, tik tok and insta! But tbh I wanted to keep it super simple for myself and not have to go get tons of ingredients so I just did some basics, got some freezer items from Costco, and also have friends and family that are kind enough to bring us some meals as we get settled into this new stage of life!
I feel like I could have done way more yet I don’t want to be wasteful.. so after the fact I will have to report what I would have done differently 😉
I spread out the meal prepping into a few days and it didn’t feel like tons of work at all! Here is a little breakdown of the items I prepped!
Recipes used will be linked or written below! Costco items will be in the photo gallery 🙂
Breakfast
- Breakfast burritos (Recipe Below)
- Superhero muffins (from Run Fast Eat Slow Cookbook, I have recipe in my Muffin Highlight on Insta)
- Waffles (I used Kodiak waffle mix)
- Pancakes (I used Birch Benders Buttermilk mix)
Lunch
- Cheesy chicken sandwiches (Recipe Below)
- Roast beef sandwiches (Recipe Below)
- Buffalo chicken wraps (so easy: I use the Just Bare chicken chunks from Costo! Air fry then top with buffalo sauce, ranch, cheese, lettuce etc)
- Deli sandwiches (I love the sandwich thins from Costco!)
Supper
- Taco meat (I love Siete Spicy Taco Mix! I just prepped 8lbs for easy thawing and meals)
- Spaghetti meat (I love Raos, just prepped with ground beef and will make noodles when we eat it!)
- Buffalo Wings (Costco)
- Shrimp Tacos (So many ways to make this, shrimp from Costco)
- Kevin’s brand meals (Costco)
- Pizza (Costco)
Snacks
- Lactation oatmeal bites (Recipe Below)
- Smoothies (Costco Mix)
- * I stocked up on pantry items for snacks mainly!
A few tips for freezer meals I have found!!
- Make sure all your food is completely cooled before storing in freezer!
- When looking up recipes, search for freezer friendly as not all meals taste good thawed out;)
- I personally am not a huge fan of “leftovers” or eating the same thing for 3 days in a row so I froze the food in servings sizes of 2 so it is easy to thaw for Matt and I!
- Use freezer bags obviously 😉 and lay bags flat in freezer! It will make for easier storing
- Date and Label your bags and whatever directions you need! Most freezer meals are best used within a couple months!
Breakfast Tacos
- Tortillas – number depends on size
- 12 eggs with salt and pepper
- 3 cups hash browns, olive oil, garlic salt, pepper, 1 tbsp butter
- Package of bacon (16 oz)
- 1 bell pepper (red) finely chopped
- 2 cups shredded cheese
Cook Bacon: I bake in the oven on parchment paper to eliminate all the mess / grease! I cook mine at convect 450 for 20 mins (or until desired crispness). Let cool then cut up into small pieces.
Heat some olive oil and scramble 12 eggs with salt and pepper
Cook Hash brown mixture: heat olive oil and cook 3 cups of shredded hash browns until soft (I didn’t cook until crispy), add 1 tbs butter, garlic salt, pepper
In separate pan sauté 1 finely chopped bell pepper in some olive oil, I used red! Once softened I added peppers into the hash brown mix. Add 2 cups shredded colby jack cheese and mix all that together. It will start to get a little sticky but mix well and level out in the pan to cool.
Let everything cool before assembling burritos. I used regular sized flour tacos shells, you can use large burrito shells as well to fit more in them. Start layering your burritos: start with bacon, add scrambled eggs for middle layer and top with hash brown mixture.
Roll burritos up and wrap tightly in aluminum foil. Add to a freezer zip lock bag and store in freezer flat.
To reheat frozen breakfast burrito: remove foil and reheat in microwave for 2 mins or until warm throughout, flipping after 1 min.
With using taco shells: this made me 14 tacos!
Crockpot Cheesy Chicken (Crack Chicken)
- 3-5 Boneless chicken breasts (I used the costco freezer ones, but any work! Note there’s a lot of cheese so if you like it more chicken dense I would add more chicken depending on size of chicken breast)
- 16oz cream cheese (cubed)
- 2 packets (1oz each) ranch seasoning
- 8oz crispy bacon (I didn’t do bacon because I didn’t have any the day I made this lol)
- 1 cup shredded cheddar cheese
Place all items in crockpot besides shredded cheese! Cook on high for 4 hours or low for 6 hours!
Last 15 mins shred your chicken (I use a hand mixer) and add shredded cheese!
I doubled this recipe! Let cook then store!
Lactation Balls : Recipe from Macy Pruett (@fittestcore on insta)
- 4.5 cups oats (I used Costco’s sprouted oats)
- 1.5 cups nut butter (I used Costco’s PB – Kirkland brand only has peanuts and salt)
- ½ cup pure maple syrup
- ½ cup honey
- ½ cup ground flaxseed
- ¼ cup brewer’s yeast
- 4 scoops collagen (I use 1st Phorms unflavored)
- 1 tbsp cinnamon
- 1 tbsp vanilla
- 1 cup mini chocolate chips
I used my kitchen aid and it worked great for mixing! Place all dry ingredients in mixer and mix. Add wet ingredients and mix! Roll into balls and place in fridge or freezer:)
Roast Beef Sandwiches
This is super simple! I just get a chuck / arm roast and place in crockpot thawed out! Add 1 cup water, salt, pepper, and garlic powder and put on high for 4 hours or low for 8 hours! May need longer depending on size! – shred up and store!
There are all sorts of ways you could go about PP meals, but anything you can do to prep I think will be worth it! Here is another blog post for some inspo! https://lifewithlaurajulaine.com/2021/10/15/post-partum-freezer-meals/
I hope this gives you some inspo, I will be excited to share what I would have done differently:) I started prepping some things around 36 weeks! -You got this mama!!:)
